This is the direction most American kitchens need. The recipe was written in Europe, it asks for a number of sheets, and what is in the cupboard is a box of envelopes. The arithmetic runs the same way as the forward conversion but ends in a count rather than a weight, which introduces a problem the forward direction does not have: sheets are discrete. A conversion that lands on 3.9 sheets cannot be measured out as 3.9 sheets without cutting one, so the last step is a judgement about which way to round.

Why one weight gives five different counts
Sheet gelatin is portioned so that a single sheet sets a predictable volume of liquid whichever grade you bought. Bloom strength describes gelling power per gram, so the only way to keep the per-sheet result constant is to vary the grams in each sheet: the strongest grade, platinum, is cut into the lightest sheets, and the softest, titanium, into the heaviest. A fixed weight of powder therefore buys you more sheets of a light grade than of a heavy one — but each of those sheets is doing a comparable amount of work, which is why the counts in the platinum and titanium columns are closer together than the sheet weights alone would suggest. Powder sits outside this system entirely, sold loose by weight at one bloom value.
Measuring and soaking, going this direction
Converting toward sheets makes the measuring easier and the handling harder. Sheets need no scale — you count them — but they do need a bowl of genuinely cold water, five minutes to soften without sticking to each other, and a firm squeeze before they go into the warm base. Water that stays in the sheets dilutes the recipe; water that is too warm starts dissolving them into the bowl. The other change is what happens to the recipe's liquid. A powder-based method usually reserves some cold liquid for blooming and adds it back later. If you are replacing 7g of powder with sheets, that reserved liquid is no longer doing a job and should go back into the main mixture, or the finished dish will be short by that volume and set firmer than intended.

How many gelatin sheets replace one packet of powder?
A standard envelope holds 7g of knox / us powder at 225 bloom, which comes to 3.9 gold sheets — or 3.9 silver, 3.9 platinum. The count differs by grade because sheet weight differs by grade. In practice most cooks round to 4 gold sheets, which is close enough for a jelly and worth being deliberate about for a mousse.
My recipe lists teaspoons of powder, not grams. What do I do first?
Convert the spoons to weight, then the weight to sheets. A level teaspoon of powder is about 2.8g, so one teaspoon comes to roughly 1.6 gold sheets and the 7g envelope is about 2.5 teaspoons. Spoon measurement is the least precise link in the chain — the same spoon holds different amounts depending on how the granules were scooped — so weigh where the texture matters.
Can I round to a whole number of sheets?
Usually, and downward. Sheets only come in whole units unless you are willing to cut and weigh them, and a set that is slightly soft can be re-melted with more gelatin while one that is rubbery cannot be rescued. The gap between 3.9 sheets and the nearest whole number is small in absolute terms — a fraction of 2g — but it compounds if you scale the recipe up.
