A weight is a more useful starting point than a sheet count, and it is what most European recipes actually give you. It also removes one of the two variables: when a recipe says grams, you no longer need to know how heavy a sheet of that grade is, only how hard it gels. What remains is the bloom ratio. 5g of gold sheet stock and 5g of Knox / US powder are the same mass of protein and different amounts of setting power, which is why the number in the answer above is not 5.

If your powder is not Knox / US powder, the ratio changes. 5g of gold sheets is 4.7g of generic us grocery powder at 215 bloom. 5g of gold sheets is 5.0g of european pastry powder at 200 bloom.
Why the grade still matters when you have a weight
Sheets are manufactured so that one sheet sets a consistent volume of liquid whatever the grade, which means the sheet weight has to move inversely to the bloom strength — platinum stock gels hardest per gram and so is cut into the lightest sheets, titanium gels softest and is cut heaviest. When a recipe hands you a weight instead of a count, the weight side of that relationship drops out but the bloom side does not. 5g of platinum stock and 5g of titanium stock are the same mass and roughly two different desserts. The chart above keeps that visible rather than folding it into a single average, which is why each grade gets its own column.
Measuring it out
Powder is sold by weight, so a scale is the direct instrument and a spoon is the approximation. A level teaspoon of powdered gelatin runs about 2.8g, and a standard envelope holds 7g, which stands in for 7.9g of gold sheet gelatin. Spoon measurement is workable up to about three teaspoons and gets unreliable past that, because each additional spoonful carries its own packing error in the same direction. The blooming step also has to be adapted. A recipe written for sheets assumes the gelatin arrives already hydrated and wrung out, contributing no liquid. Powder arrives dry and needs roughly four to five times its own weight in cold liquid to swell in, and that liquid stays in the finished dish — take it from the recipe's cold ingredients rather than adding it. Let the granules stand until they look like wet sand with no dry centres before any heat goes near them.
One caution about where these weights come from. Bloom values for retail powders are rarely printed on the packaging; the site's figures are drawn from published references and are labelled with a confidence level in the bloom strength reference. Sheet weights are European standards and vary between manufacturers. Both are good enough for the arithmetic above and neither is a specification — for texture-critical work, test a small batch.

Does 5g of gelatin mean 5g of sheets or 5g of powder?
It depends on what the recipe was written around, and the two are not interchangeable. 5g of gold sheet gelatin converts to 4.4g of knox / us powder, because the powder gels harder per gram. If the recipe is European and lists grams without naming a format, sheet gelatin is the more likely reading; if it is American, powder is. The clue is usually elsewhere in the method — a recipe that says "soak the gelatin in cold water and squeeze" means sheets, one that says "sprinkle over cold water" means powder.
How many sheets is 5 grams of gelatin?
At gold grade, 5g works out to about 2.5 sheets, since a gold sheet weighs 2g. The count changes with grade — the same 5g is a different number of sheets in every row of the chart above. If your recipe gives you a sheet count rather than a weight, the 5-sheet page starts from the count instead.
